- 360 ml whole milk
- 3 large egg yolks
- 65 g granulated sugar
- 24 g cornstarch
- 5 ml vanilla extract
- 15 g unsalted butter
For the chocolate ganache
- 170 g semisweet chocolate, finely chopped
- 120 ml heavy cream
Instructions
1. Prepare and chill the pastry cream before making the cupcakes:
Add the egg yolks, sugar, and cornstarch to a medium bowl and whisk until smooth and pale. Heat the milk in a saucepan over medium heat until steaming but not boiling. Slowly pour about half of the warm milk into the egg mixture while whisking continuously, then pour everything back into the saucepan.
2. Cook the pastry cream until thick and smooth:
Cook over medium heat, whisking constantly, until the mixture thickens and begins to bubble. Continue whisking for about 1 minute, then remove from the heat. Stir in the vanilla extract and butter until smooth. Transfer the pastry cream to a bowl and press plastic wrap directly against the surface to prevent a skin from forming. Refrigerate until completely cold.
3. Prepare the pan and preheat the oven:
Preheat the oven to 350°F (175°C). Line a standard 12 cup muffin pan with cupcake liners.
4. Combine the dry ingredients for the vanilla cupcakes:
Add the flour, baking powder, and salt to a medium bowl. Whisk until evenly combined, then set aside.
5. Cream the butter and sugar before adding the eggs:

8. Fill the cooled cupcakes with pastry cream using your preferred method:

Transfer the chilled pastry cream to a piping bag fitted with a narrow filling tip. Insert the tip straight down through the center of each cupcake and gently squeeze in the cream. Stop once the cupcake feels slightly heavier, being careful not to overfill and split the cake.
8.2 Make a small opening and pipe in the pastry cream:
Use a small paring knife, cupcake corer, or the wide end of a piping tip to remove a small circle from the center of each cupcake. Keep the opening narrow and do not cut all the way to the bottom. Pipe the chilled pastry cream into the cavity, then place a small piece of the removed cake back over the filling before adding the ganache.
9. Make the smooth chocolate ganache topping:
Place the finely chopped chocolate in a heatproof bowl. Heat the heavy cream until steaming, then pour it over the chocolate. Let it sit for 2 to 3 minutes, then stir slowly from the center outward until smooth and glossy. Let the ganache cool briefly until slightly thickened but still pourable.

Storage
