Brown Butter Pecan Blondies are an easy one pan dessert made with browned butter, brown sugar, vanilla, and toasted pecans folded into a soft blondie batter. Browning the butter gives the bars a deeper, nutty flavor, while the pecans add just enough crunch to balance the rich, chewy texture.

The batter comes together with simple ingredients and bakes into golden squares with soft centers and lightly crisp edges. They are easy to slice and serve, whether you are making a simple dessert at home, bringing something to share, or just keeping a few on hand for a sweet treat.

Just One More Square

The top bakes up with a delicate crackle, while the inside stays dense, tender, and just a little fudgy. Bits of pecan run through every square, giving each bite a buttery crunch against the softer center.

There is a warm, toasted aroma as they bake, with caramel like notes that become even better once the bars have had a little time to cool. They are rich without feeling heavy, with just enough chew to make that second square hard to resist.

Ingredients

Instructions

  1. Brown the butter:
In a small saucepan, melt the butter over medium heat. Once melted, continue cooking, swirling the pan often, until it foams and turns golden with brown specks at the bottom. It should smell warm and butterscotch like. This takes about 5 to 8 minutes. Pour the browned butter, including the browned bits, into a large mixing bowl and let it cool for 10 to 15 minutes.
  2. Prepare the pan and toast the pecans:
Preheat the oven to 350°F. Line a 9 inch square baking pan with parchment paper, leaving enough overhang on the sides to lift the blondies out later. Spread the chopped pecans on a separate baking sheet and bake for 5 to 7 minutes, just until fragrant. Remove from the oven and let them cool.
  3. Mix in the sugars:
Add the brown sugar and granulated sugar to the cooled browned butter. Whisk until well combined and the mixture looks smooth and glossy.
  4. Add the eggs and vanilla:
Whisk in the eggs and egg yolk one at a time, mixing well after each addition. Add the vanilla and whisk for about 1 minute, until the mixture looks smooth and slightly thickened.
  5. Fold in the dry ingredients:
Add the flour, baking powder, and salt. Use a spatula to gently fold everything together just until no dry streaks remain. Avoid overmixing so the blondies stay soft and chewy instead of becoming cakey.
  6. Fold in the toasted pecans:
Add the cooled chopped pecans and gently fold them into the batter until they are spread throughout.
  7. Fill the pan and add the whole pecans:
Spread the batter evenly into the prepared baking pan and smooth the top lightly. Arrange the whole pecan halves over the surface, spacing them so each blondie can have a pecan on top after slicing.
  8. Bake until the edges are set:
Bake for 27 to 32 minutes, until the edges are golden and set and the top has a light crackle. A toothpick inserted near the center should come out with a few moist crumbs, not wet batter.
  9. Cool before slicing:
Let the blondies cool completely in the pan. Use the parchment overhang to lift them out, then slice into squares with a sharp knife.

How to Brown Butter

Browning butter is simple and adds incredible flavor. It brings a warm, nutty, almost butterscotch-like richness that makes these blondies special.

Here’s how to do it:

  1. Use a light-colored pan if you can — it helps you see the color change.
  2. Cut the butter into chunks and melt it over medium heat.
  3. Once melted, the butter will foam. Stir or swirl the pan often.
  4. After a few minutes, it will turn golden with brown specks at the bottom. This is the milk solids toasting.
  5. When it smells like butterscotch or toasted nuts, it’s ready.
  6. Take it off the heat and scrape it all (including the brown bits) into your mixing bowl.

Let the browned butter cool for 10–15 minutes before using.
If it’s too hot, it can cook the eggs when you mix them in — you want the butter warm, but not sizzling.

Why Metric?

For clarity and consistency, I use metric measurements in my recipes. It's more accurate (especially for baking), easier to scale up or down, and ensures better results — no guessing whether your "cup" is packed or level. But don’t worry, US equivalents are included below so you can bake with whatever you have on hand.

Ingredient US Measurement Metric Measurement
Unsalted butter 1 cup (2 sticks) 225 g
Light brown sugar, packed 1½ cups 300 g
Granulated sugar ¼ cup 50 g
Large eggs 2 2
Large egg yolk 1 1
Vanilla extract 2 teaspoons 10 ml
All purpose flour 2 cups 250 g
Baking powder ½ teaspoon 2 g
Salt ½ teaspoon 3 g
Pecans, roughly chopped 1 cup 120 g
Whole pecan halves 12 to 16 12 to 16

Storage

  • Store cooled blondies in an airtight container at room temperature for up to 3 days.
  • For longer storage, keep them in the refrigerator for up to 5 days and bring them to room temperature before serving.
  • Freeze individual squares in a freezer safe container for up to 2 months. Place parchment paper between layers to prevent sticking.
  • Thaw at room temperature before serving.

Notes

  • Let the browned butter cool for 10 to 15 minutes before mixing in the sugars and eggs. If it is too hot, it can affect the texture of the batter.
  • Toasting the chopped pecans first brings out more of their flavor and gives the blondies a better crunch.
  • Do not overmix once the flour is added. Fold just until the dry streaks disappear so the blondies stay soft and chewy.
  • The blondies are done when the edges are set and the center is no longer wet. A few moist crumbs on a toothpick are fine.
  • Let them cool completely before slicing for the cleanest squares.
