Soft Rolls Filled with Spicy, Cheesy Chicken
Soft, buttery rolls cradle the creamy buffalo chicken filling, baked until melty and warm. Each bite is rich and cozy, with a hint of heat and just enough cheese to keep it satisfying. Whether you serve it as a dip or tucked into rolls, it’s an easy, inviting dish perfect for casual gatherings or a quiet night in.
Ingredients:
- 2 cups shredded cooked chicken breast (or 2 × 12.5 oz canned chicken, drained)
- 8 oz block cream cheese, softened
- ½ cup buffalo sauce
- ¼ cup ranch dressing
- 1 cup shredded mozzarella cheese, divided
Instructions:
- Preheat the oven:
Heat oven to 375°F (190°C). Lightly grease an 8-inch baking dish. - Mix the base:
In a large bowl, combine the softened cream cheese, buffalo sauce, ranch dressing, chicken, and half of the mozzarella cheese. Stir until smooth and evenly mixed. - Assemble the dip:
Spread the mixture into the prepared dish. Sprinkle the remaining mozzarella cheese evenly over the top. - Bake until bubbly:
Bake for 20–25 minutes, until hot and the cheese is melted and lightly golden. - Serve warm:
Let cool slightly, then serve with crackers, tortilla chips, fresh vegetables, or use the baked dip as a filling for Buffalo Chicken Sliders by layering it onto soft rolls and toasting until warm.
Storage:
- Store leftovers in an airtight container in the refrigerator for up to 3 days.

- Freezing is not recommended as the texture may change after thawing.

- Adjust the heat by adding more or less buffalo sauce to taste.
- Shredded rotisserie chicken adds more texture and flavor than canned chicken.
