  1. Melt the butterscotch and peanut butter.

    If you don’t have a microwave-safe bowl, boil a few inches of water in a pot, then place a heat-safe bowl on top so it sits over the steam. Stir as the gentle heat melts everything into a smooth mixture.
  2. Coat the chow mein noodles.
    Add the noodles and gently fold until every strand is coated and glossy. Take your time so the noodles keep their shape.
  3. Mix in the optional additions.
    Stir in mini marshmallows or nuts if you’re using them. Mix softly so the noodles don’t break too much.
  4. Scoop the haystacks.
    Use a spoon or cookie scoop to drop mounds onto a parchment-lined tray. Lightly shape them with your fingers if you want the “haystack” texture more defined.
  5. Let them set until firm.
    Leave the haystacks at room temperature until they harden, or refrigerate for about 10 minutes if you want them ready faster.

Storage

  • Store in an airtight container at room temperature for up to 4 days.
  • Keep chilled if your kitchen is warm so the haystacks stay firm.
