Instructions
- Prep the vegetables and fillings:
Wash and slice all vegetables into thin, easy-to-roll pieces. Set everything out before starting so the rolls are easier to assemble. - Soften the rice paper:
Fill a shallow bowl or plate with warm water. Dip one rice paper wrapper into the water for a few seconds until softened but still slightly firm. - Layer the fillings:
Place the softened wrapper onto a clean surface. Add lettuce first, then layer cabbage, carrots, cucumber, avocado, and any optional fillings like mango, bean sprouts, herbs, or protein. - Roll tightly:
Fold the sides inward over the filling, then roll from the bottom upward, keeping everything snug as you roll. - Prevent sticking while working:
If the wrappers begin sticking to the surface or to each other, lightly rub a few drops of neutral oil onto your hands or work surface. - Serve fresh:
Serve immediately with your favorite dipping sauce, or cover with a damp paper towel until ready to eat.
Storage
- Store the rolls in a single layer and cover with a lightly damp paper towel to help prevent drying.
- Avoid stacking the rolls directly on top of each other or they may stick together.
