Hwachae(화채) is a traditional Korean fruit punch that’s been enjoyed for generations, especially during the warmer months. At its core, it’s a simple mix of fresh fruit and a lightly sweetened liquid, served cold as both a drink and a dessert. While older versions were often made with honey water or tea, modern hwachae has become more flexible, with milk or soda commonly used for a creamier or more refreshing finish.

There’s something easy about a bowl of hwachae set out to share. It’s often made in a large bowl or even served right inside a hollowed watermelon, turning simple ingredients into something that feels a little more special. However you make it, it’s meant to be cold, refreshing, and easy to scoop and enjoy.

The first spoonful is cold and lightly sweet, with crisp fruit and a soft chill from the ice. The watermelon is juicy, the strawberries slightly tender, and the grapes snap just a little as you bite into them. The liquid sits somewhere in between—either gently creamy or lightly fizzy—coating the fruit without overpowering it.

Everything feels cool and balanced. Not too rich, not too sweet, just refreshing enough that you keep going back for another scoop without thinking twice.

Ingredients

  • 4–5 cups fruit (watermelon, strawberries, grapes, blueberries, or mixed fruit/cocktail fruit)

Liquid base (choose one):

  • 1 cup milk + 1 cup lemon-lime soda
  • 2 cups milk soda (such as Milkis)

Alternative:

  • 2 cups strawberry milk

  1. Prepare the fruit:
    Cut any larger fruit into bite-sized pieces and add everything to a large bowl or a hollowed watermelon.
  2. Choose and add the liquid:
    Pour in your liquid base. If using milk and soda, add the milk first, then gently pour in the soda to keep some fizz.
  3. Adjust to taste:
    Taste and add condensed milk if you want it a little sweeter or creamier. Lightly mix to combine without breaking up the fruit.
  4. Chill before serving:
    Let it sit in the fridge for about 30 minutes so everything is cold and the flavors come together.
  5. Add ice and serve:
    Add ice just before serving and give it a gentle stir. Serve cold with a ladle or large spoon.

Storage

  • Store in the fridge for up to 1 day.
  • The soda will lose its fizz over time, so it’s best enjoyed fresh.
  • If making ahead, keep the fruit and liquid separate and combine before serving.

  • Cut fruit into slightly uneven pieces so it feels more natural and not overly uniform.
  • You can make it with just soda (like Sprite) without milk for a lighter, more refreshing version.
