Stuffed Bell Peppers
A Hearty Weeknight Favorite
Stuffed bell peppers are a warm, satisfying dinner with tender peppers, a hearty savory filling, and a golden layer of melted cheese on top. They are simple enough for a weeknight but still feel like a complete homemade meal straight from the oven.
Each pepper bakes until soft while the filling stays flavorful and comforting, giving you a little bit of everything in every bite. They are easy to serve, easy to reheat, and a great option when you want something filling without making dinner complicated.
Golden Topped and Full of Comfort
As the peppers bake, they become tender around the edges while still holding their shape, and the filling turns rich and savory underneath a layer of melted, lightly browned cheese. Each bite has a little sweetness from the pepper, plenty of hearty filling, and that warm, cheesy finish that makes the whole dish feel especially comforting.
Fresh from the oven, the tops are bubbly and golden and the filling stays moist without becoming heavy. It is the kind of dinner that smells inviting as it bakes and tastes even better once everything has had time to come together.
Ingredients
- 4 large bell peppers
- 1 tablespoon olive oil
- 1 pound ground beef or ground turkey
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup cooked white rice
- 1 cup tomato sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella or cheddar cheese
- 2 tablespoons chopped fresh parsley, optional
Instructions
- Preheat the oven:
Preheat the oven to 375°F. Lightly grease a baking dish large enough to hold the peppers in a single layer. - Prepare the peppers:
Cut the bell peppers in half lengthwise and remove the seeds and membranes. Arrange them cut side up in the prepared baking dish. - Cook the meat:
Heat the olive oil in a large skillet over medium heat. Add the ground beef or ground turkey and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess grease if needed. - Add the onion and garlic:
Add the diced onion to the skillet and cook for 3 to 4 minutes, until softened. Stir in the garlic and cook for about 30 seconds, just until fragrant. - Make the filling:
Stir in the cooked rice, tomato sauce, Worcestershire sauce, Italian seasoning, salt, and black pepper. Cook for 2 to 3 minutes, stirring occasionally, until everything is evenly combined and heated through. - Fill the peppers:
Spoon the filling evenly into the bell pepper halves, gently packing it in without pressing too firmly. - Bake:
Cover the baking dish loosely with foil and bake for 25 minutes, or until the peppers begin to soften. - Add the cheese:
Remove the foil and sprinkle the shredded cheese evenly over the tops of the peppers. - Finish baking:
Return the peppers to the oven and bake uncovered for another 10 to 15 minutes, until the cheese is melted and lightly golden and the peppers are tender. - Serve:
Let the stuffed peppers rest for about 5 minutes before serving. Garnish with chopped parsley, if desired.
Storage
- Store leftover stuffed bell peppers in an airtight container in the refrigerator for up to 4 days.
- Reheat in a 350°F oven until warmed through, or microwave individual portions until hot.
- To freeze, let the peppers cool completely, then place them in a freezer-safe container and freeze for up to 2 months.
- Thaw overnight in the refrigerator before reheating.
Note
- Any color of bell pepper works. Red, yellow, and orange peppers are sweeter, while green peppers have a slightly stronger flavor.
- Ground beef or ground turkey both work well for the filling.
- Use fully cooked rice before adding it to the filling.
- Mozzarella gives a mild, stretchy topping, while cheddar adds a sharper flavor.
- If the peppers are very large, they may need a few extra minutes in the oven to become tender.
- For softer peppers, add 2 to 3 tablespoons of water to the bottom of the baking dish before covering with foil.
